Scouted Grilling Tips from B&M Market

At the start of every summer, grill masters across the country provide step by step instructions on grilling to perfection.  Our Scouted Grill Master, Jonathan, of B&M Market has provided us with step by step fail proof instructions:

B&M’s Easy Steps to the Perfect Grilled Burger

PRIME ALL THE TIME: Here at B&M we carry only USDA prime meat. If you are going to treat yourself to a burger, enjoy the highest quality and taste. The quality of your meat really will make a difference.

DON’T SKIMP ON THE BUN & CHEESE: Using good meat? Then enjoy a good bun and high quality cheese. During the last minute or 2 of cooking, lightly toast the buns and add the cheese for the perfect melt. My favorite roll is a fresh brioche, and my favorite melted cheese is Vermont white cheddar.

HANDLE WITH CARE: If you are making your own burger creation,

GENTLY mix your meat and seasonings together. We all tend to over-mix and then pack the meat together in a tight ball. Show restraint and gently form the patty, using wet hands to help prevent the meat from sticking to your fingers. Make each patty about ¾ of an inch thick and 1inch larger than your bun. The burgers will “shrink to fit” the bun and your family will think you are an expert!

THE SECRET THUMBPRINT: It always bothers me when the center of the cooked burger puffs up to be twice as high as the edge. Before putting it on the grill, use your thumb or the back of a teaspoon to make an indent in the center of the burger patty. The indent will disappear during the cooking and your burger will be more uniform in height.

KEEP IT COLD: Unlike larger cuts of meat, burgers taste best when kept cold until you begin cooking. The cold temperature helps retain the fat, making for a juicy burger.

SKIP THE FLIP (AND PLEASE DON’T SQUEEZE): I know it’s tempting, but you do not need to flip it more than once. I promise – one flip is all it needs. Turning more than once causes the juices to escape and creates a tougher burger. And please…. don’t squeeze the juices out of the burger by pressing down on it with the spatula. I don’t know why we all feel the need to do this, but try to resist the spatula squeeze!

HIGH HEAT = TENDER MEAT – When cooking burgers on a gas grill, cook at a medium high heat and use the cover. Burgers on a charcoal grill should be cooked uncovered.

Temperature Cooking Guidelines for ½ lb Burgers – Minutes per Side

3 Minutes – Rare
4 Minutes – Medium Rare
5 Minutes – Medium
6 Minutes – Well-done

B&M’s 5 Essentials To Grilling The Perfect Steak:

Speak with your butcher to pick the best steak for you. Do you like extra flavor (Bone-In Ribeye). Do you hate fat (Filet Mignon). Do you want to try something a little different (Skirt Steak). Don’t forget : PRIME ALL THE TIME. If you are going to eat a steak, treat yourself to a prime piece of meat.

Start with a clean, oiled grill to prevent meat from sticking. Preheat the grill, give it a scrub with  a grill brush, and wipe with vegetable oil. 

Let the steak come to room temperature before grilling. This will help you cook the steak evenly as it’s easier to bring the steak up to temperature internally.

Avoid turning meat frequently, one flip is all it needs. Only use tongs to flip your steak, using tongs helps retain the juices.

Once your meats are grilled to your liking, let them rest for a few minutes tented under foil. This allows the meat to “relax”, making for a juicier, more tender steak.
