We love incorporating ingredients from our gardens, and mint is starting to come up here in Charlottesville; plus, the raw sour cream adds a “guilty pleasure” aspect to the salad that’s much appreciated as we focus on lighter fare. A perfect dish for the winter-to-spring transition, it packs wonderful health benefits in each satisfying bite. Here’s how to make it at home:
Zen Cauliflower Salad
RAW SOUR CREAM
yields 1 1/4 cup
1 cup cashews (soaked and rinsed)
1/2 cup water
1/4 cup lemon juice
1/2 teaspoon sea salt
Blend all ingredients together in a Vitamix until smooth.
3 tbsp coconut oil
2 tbsp lemon juice
1/2 tsp. tumeric
1/2 tsp sea salt
1/4 tsp freshly ground pepper
1 head cauliflower
1/2 cup finely chopped soaked cashews
6 dates, pitted and finely chopped
1/4 cup chopped cilantro leaves
1/4 cup chopped mint leaves
1 tbsp cacao nibs
Mix all ingredients together, dress, and garnish with cashew sour cream.
