What We're Making: The "Peaches and Cream" Cocktail

Sidney Lance of Savannah, Georgia’s Pacci restaurant lets the seasons guide his creative cocktail menus, which he updates four times a year. Behind the bar at the Italian eatery in Savannah’s Historic District, he develops drinks that compliment the current season and incorporate fresh, local ingredients, carefully enhancing them with handcrafted syrups and infused spirits. 

To coincide with peach season, the innovative bartender shares his recipe for the “Peaches and Cream,” a drink he describes as versatile and not too sweet, something that can be enjoyed any time of day (and a definite contender for the next great brunch cocktail). Here’s how to make it at home:

Peaches and Cream Cocktail

Ingredients (makes one cocktail)
1 ounce Grey Goose vodka
¾ ounce Town Branch bourbon
¾ tablespoon vanilla syrup (see below for instructions and ingredients)
¾ tablespoon freshly squeezed lemon juice
2 dashes peach bitters
1 egg white
4 peach slices
3 cherries

Instructions
To make the vanilla syrup, add vanilla bean to equal parts water and sugar. Bring to a boil, and let simmer for 10 minutes. Steep for five minutes, then strain. To make the cocktail, shake vodka, bourbon, vanilla syrup, lemon juice, bitters, and egg white in a shaker without ice for approximately one minute. Add the cherries and two peach slices and ice, shake, then strain. Serve in a coupe glass and garnish with remaining peach slices and a sprig of mint.
