How to Prepare Lighter Fare

After weeks of traditional wintery cuisine, it’s time for a respite from richness. Ending the year on a lighter note leaves us feeling ready to embark on our New Year’s resolutions, and a festive feast of perfectly prepared fish feels like a nod to simplicity, not sacrifice. Here are the main elements for a delicate dish:

  1. Select your fish. Halibut, flounder, trout and cod are our favorites, but you should cook whatever you prefer. Freshness is the most important factor.
  2. Make sure you have a good pan. Cast iron or stainless steel will yield the best results.
  3. Keep it simple. Cook your fish in a small amount of hot oil for approximately ten minutes, and season with lemon, salt, and pepper.
