Watermelon Salad for the Win!

This Watermelon Salad recipe, created by local culinary shop and tasting room Fresh Harvest is Easy.  Healthy.  Delicious.  Addictive! Plus, it includes an Arkansas seasonal and summer favorite – watermelon!

Ingredients per serving:

1 cup of cold watermelon, cubed 1/4 cup of feta cheese, crumbled or cubed 2-3 fresh mint leaves (chopped) – optional 1+ tablespoon Fresh Harvest Lemongrass Mint Balsamic

Directions: Place the watermelon in a bowl and drizzle with with balsamic vinegar. Top with feta cheese, mint leaves and serve. This recipe can be made in individual servings or multiplied and served in a large salad bowl.
