WHAT WE’RE MAKING | Shaved Brussels Sprout Salad
David Christopherson of our local fav Roosevelt & Company shared this quick recipe for a shaved Brussels sprout salad. He was inspired by a salad he enjoyed while visiting Chicago for market. He told us this light, simple, and refreshing salad tastes so good you’ll almost forget it’s good for you!
You will need:
Brussels Sprouts
Toasted Almonds
Vinaigrette Dressing
Grated Parmesan Cheese
Red onion (optional)
Wash Brussels well, thinly slice or shave raw on a mandolin. Add toasted almonds, drizzle with a simple vinaigrette (David uses a Champagne or Cabernet vinaigrette), sprinkle salt and pepper, and top with a bit of Parmesan. If you are an onion fan, toss some finely shaved red onion for a little bit of color and flavor!
