ROASTED SWEET POTATO & ARUGULA SALAD
Ingredients:
Arugula
1 small sweet potato
Salt & pepper
Grape tomatoes
Olive Oil
Instructions:
Cut a small sweet potato into quarters, coat with oil and roast for 15 minutes
While sweet potato is resting, toss arugula with olive oil, salt & pepper
Garnish with creamy feta crumbles, sliced tomatoes
Tear sweet potato into small pieces and top salad
